A solution like SANmelody or SANsymphony of Datacore might do the trick. What the solution actually does is abstracting the physical layer from the storage offering (amongs other features): snapshotting.

What you can do is snapshot the VM to a disk and write that snapshot during business hours to another media (f.e tape, disk, ...).

The SANmelody &amp; SANsymphony solution works on blocklevel and also contains async-mirror, sync-mirror, iSCSI &amp; FC connectivity as well as diskpooling, thin provisioning, ...

Get a look at www.datacore.com, it used by small and large companies and is correctly priced as it offers a full storage virtualization solution with an aim at virtualization.
